Dark Chocolate and Oat Clusters


Description:
These are super easy and super yummy!! I got the recipe from my Health magazine. Peanut butter and chocolate combined can't be beat. The kids loved them too

Ingredients:
2 tablespoons peanut butter
2 tablespoons 1% low-fat milk (I used original almond milk)
1/4 cup semisweet chocolate chips
3/4 cup old-fashioned rolled oats

Directions:
1. Heat peanut butter, milk, and chocolate chips in a saucepan over low heat 3 minutes or until chips melt.

2. Stir in oats. Remove from heat.

3. With a spoon, small ice cream scoop, or melon baller, drop 8 ball-shaped portions on a wax paper−lined baking sheet. Let set in fridge 10 minutes.

  3. I made these for a game group a week or so ago, and they were a huge hit. I used my small cookie scoop to portion and shape, and a double batch made a couple dozen bite-and-a-half size cookies.. just perfect to relieve a snacky-chocolate craving.

  4. That's awesome! I might make some this afternoon. I love them for my kids for the peanut butter and oats! I need to get a cookie scoop for consistency. What brand is your scoop?

  5. I don't remember the brand - i picked it up at one of those outlet mall kitchen stores. I think it's about a 2 tsp size (and I let it overflow a little on these).. I have a couple other larger sizes too, but all from different places. I didn't think I needed one till I got them... now that I have them, I find a million uses. :) portioning cookies, cupcakes, sandwich fillings, enchilada fillings, anything-fillings... making pretty dollops of frosting or whipped cream or sour cream or.... bottom line - they're a scarily useful fun toy. :) (and an easy way for kids to help when making cookies...)
