Description:
This is a super yummy breakfast that tastes like dessert. This is from the LIVESTRONG.COM site but it was sent to me by Healthy Bitch Daily.
Ingredients:
2 cups organic unsweetened almond vanilla milk
2 cups water
8 ounces frozen dark sweet cherries
1 cup whole steel cut oats
1 tablespoon brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 cup sliced almonds
Directions:
In a medium pot, bring the almond milk and water to a boil. Roughly chop the frozen cherries while waiting for the liquid to boil. When the liquid comes to a boil, stir in the oats, cherries, brown sugar and salt. Reduce the heat to low and simmer until the liquid has absorbed and it has reached your desired thickness.
Remove from the heat and stir in the vanilla extract and sliced almonds. Divide the oats into single serving containers and refrigerate until you are ready to eat.

I haven't had good luck cooking steel cut outs before so I think I gave up on them. I will have to give them a try again. Have you tried making Quinoa into a yummy breakfast yet?

ReplyDeleteBut seriously try these! They're so yummy. When we were in the country I became obsessed with them and would make a big batch at night so that I'd have breakfast ready in the morning.
It really does sound good. The cherry and almond together sound very yummy. I would think about substituting almond extract for the vanilla. What do you think?
ReplyDeletehmmm....I don't know about the almond extract. I don't really use it enough to know how it would taste. Do you not like vanilla? You could probably just leave out the vanilla if you get the vanilla almond milk.
ReplyDeleteI was thinking it sounded kind of good until I realized you eat it cold.........What do the oats taste like cold? I am just picturing thick cold oatmeal.
ReplyDeleteI love vanilla, but I usually put almond extract in cherry pie so I thought maybe with the cherries it would be good.
ReplyDeleteGina-I hadn't even noticed the part about eating cold. I only put mine in the fridge if I make them the night prior and I reheat them in the morning. If I'm making a fresh batch in the morning I eat it right away though. It's super yummy.
ReplyDeleteSo you did reheat it.....to me that sounds a lot more tasty. This is one of those recipes that I would try if it was made for me. I don't think the kids would eat it .....so probably not worth me trying.
