Roasted Zucchini Slices

Description:
I am so into roasting vegetables lately. It is such an easy, healthy and delicious preparation.

Ingredients:
1-3/4 pound zucchini, cut into 1/4-inch slices
1 teaspoon dried thyme leaves
Salt and pepper to taste
2 tablespoons olive oil

Directions:
Preheat oven to 450° F. Place zucchini slices in large, shallow pan in one layer or slightly overlapping as needed. Sprinkle with the thyme, salt and pepper. Drizzle with the olive oil. Roast until tender and lightly browned, about 40 minutes. Serve hot or warm.

Tracy, I used to do something very similar, but on the grill - I just quartered the zucchinin lengthwise and marinated in Paul Newman's Italian dressing, grill until tender - takes about 5-10 minutes on the grill. I don't know if you have a balcony and can grill, but for those who can, it's another tasty variation! I'll have to try yours now that it's getting a little cold to be grilling (not that snow has stopped me before).

  4. Actually, my outdoor grill is a George Foreman electric - no gas grills allowed in the complex. :( I should get an indoor one, though.

  5. no, unfortunately no balcony! we do have a foreman grill but it's small so it takes awhile to grill large quantities of veggies! try this.....you'll love it! i made it last night and it was all i could do to not eat all of it myself!
