For the Cherry Filling:
- 1 pound frozen cherries, pitted
- 1/4 cup granulated sugar (adjust according to taste)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
For the Crisp Topping:
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup packed brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/3 cup unsalted butter, softened
Instructions:
Preheat your oven to 375°F (190°C). Grease a baking dish (an 8x8 inch dish works well) with butter or cooking spray.
In a mixing bowl, combine the frozen cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until the cherries are evenly coated.
Transfer the cherry mixture to the greased baking dish, spreading it out evenly.
In another mixing bowl, combine the flour, rolled oats, brown sugar, cinnamon, and salt for the crisp topping. Stir until well mixed.
Add the softened butter to the dry mixture and use a fork or your fingers to mix until it resembles coarse crumbs and everything is evenly incorporated.
Sprinkle the crisp topping evenly over the cherry mixture in the baking dish.
Bake in the preheated oven for 30-35 minutes, or until the cherry filling is bubbling and the crisp topping is golden brown and crispy.
Remove from the oven and let it cool for a few minutes before serving.
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
