Tony the Pizza Man




Lyla and I decided to make a pizza with a face on it! She named him Tony. It was quite delicious! As you can tell from the pictures we had a variety of items, veggie bacon for the mouth with olive teeth, a pepper nose and pepper eyebrows and veggie bacon eyes with tiny onion pupils and there was a sprinkling of chopped red onions for the freckles. We used a bunch of Daiya cheese and it was SO good! Most importantly, I think we had a great time making our pizza man.

Superbowl 2013!!

So, none of us are "that" into the Superbowl, however, we still like to mark the occasion with some type of food that we deem "Superbowl food". This year we decided on making the vegan frankfurters by Fieldroast. I made the Summertime Succotash to go along with it. We also got the potato salad and chickpea fries from Peacefood Cafe! This was my idea of a yummy Superbowl Sunday meal! The kids also got to snack on some type of Pirate's Booty snack in front of the tv which normally isn't allowed so that made them happy! :-) Adrian and I cheered for the Ravens and Lyla and Dave cheered for the 49'rs. Raven's won! Woohoo!

Pad Thai Noodles


I found this recipe today and tried it because it looked SO easy. It's from Chloe's Kitchen http://chefchloe.com/entrees/pad-thai-noodles.html. I personally loved it and so did my husband. My kids, not so much, but they're still coming around to trying new things. I won't  give up on it. I just used regular pad thai noodles because we couldn't find the brown rice version.

You won't be disappointed with this healthy vegan version of traditional Pad Thai. Using brown rice noodles instead of white rice noodles is a deliciously sneaky way to increase the nutritional value of this dish. These tangy, sweet and slippery noodles are seriously addicting!

Ingredients

  • 8 ounces brown rice noodles
  • 3 cups broccoli florets (fresh or frozen)
  • 4 tablespoon brown sugar
  • 3 tablespoons fresh lime juice, plus wedges for serving
  • 4 tablespoons soy sauce
  • 1 tablespoon canola oil
  • 3 scallions, thinly sliced
  • 1 garlic clove, minced
  • Chopped fresh cilantro, for garnish
  • Chopped roasted salted peanuts, for garnish

Procedure

Bring a large pot of heavily salted water to a boil. Add noodles and cook according to package directions. Add broccoli for the last 5 minutes of boiling and let cook until broccoli is fork tender. Drain, rinse with cold water, and drain again.
In a small bowl, whisk together brown sugar, lime juice, and soy sauce. In a large skillet, heat oil over medium-high heat. Add scallions and garlic and cook, stirring constantly, until fragrant. Add soy sauce mixture and noodles and broccoli to the skillet. Toss constantly until noodles and broccoli are coated with the sauce.
Serve noodles with lime wedges and garnish with cilantro and peanuts.
